Jessica Jesse || Easy Peasy Scones

  By now, if you have been following BuDhaGirl you pretty much know that I love to cook. I cook everyday. I do not find it a chore. To me cooking is comfort. It puts me completely in my “zone.” I flow with “it” when I cook. I also love it because it allows me to give of myself to my family and friends. I sometimes go all out. I really love to think outside-the-box. But, starting BuDhaGirl has taken some of my prep time, I don’t have as much time as I used to. So, adapting is a good technique…I think the theory of evolution is based on this. I want to share with you one of my most simple recipes that will make you a YUM star…Scones. You basically need two ingredients:  Sticky Fingers Scone mix (original flavor) & heavy cream. TA…DA…that’s it. Finito. Oven to 350º. You take the scone mix and pour it in a bowl, then, you measure 1 cup heavy cream and add it to the scone mix. I pour about ¾ of the cup first to make sure I don’t get the mix too wet. However, I most always end-up using the entire cup. Mix with spoon. The mix looks crumbly…you want that. Then with your hands and a spoon form loose mounds. DO NOT PRESS THEM INTO TIGHT BALLS. UGH. Sheet pan covered in silpat or parchment.  Place your lovely light mounds on your sheet pan. Bake until done. Okay until light golden brown, about 30 minutes. But, check them. They should be firm but not rocks. You can make mini scones because you can make mini mounds (take less time in the oven)…great for cocktails. Do not make your scone mounds too big because they will not cook inside. Here’s the fun part…when you buy the ORIGINAL scone mix…you can add whatever you want to the mix. Here are some of my favorite combos: SAVORY: Cheddar cheese & chives, Cheddar cheese & bacon, Parmesan, Serrano & Pimenton, Rajas & Cotija Cheese SWEET: Cranberry & pecans, Butterscotch, Chocolate chip, Cinnamon & Sugar
