Jessica's Cranberry Relish

Warning: this recipe is not for those afraid of sugar.

I love this recipe because it makes a gorgeous and tasty gift for the holidays, it is super easy to make and it out of this world with traditional holiday meals. I even spread it on buttery bread for breakfast.

Ingredients:

2 bags fresh cranberries

4 cups sugar

Rind of 1 large orange grated

¾ cup Grand Marnier (or other orange liqueur)

2 cup whole pecans, this is optional

 

How to:

In a 9 X 13 pyrex or oven proof baking dish with sides add the 2 bags of rinsed fresh cranberries. Top with 4 cups sugar and mix well. Add orange rind. Cover with aluminum foil and make some slits for ventilation. Place container with cranberries on an oven-proof tray with sides. Bake in a 350 degree oven for about 40 minutes. Check to see at that time if sugar has dissolved and is bubbling, if not cover again and check every few minutes until the sugar has become syrup. Once this has taken place, uncover and cook until the liquid is reduced and the consistency becomes that of a relish. Remove from oven. Immediately pour the Grand Marnier over the hot cranberries. Be careful because it could sputter, this also removes some of the alcohol just leaving the flavor. Let cool. Once cool you may add the pecans.
