This is one of my favorite ways to remix. It is 5:45ish, pushing 6ish and dinner is something that will need to be taken care of soon.
I have been BuDhaGirling all day and have not had a chance to break to think about dinner, much less go to the store. So, I say night, night, to my office and head downstairs to make Dinner del Frigo (refrigerator dinner).
First things first, Vodka, my shitzu needs to be fed. OK, that done I open the refrigerator and see what I can come up with. I really have learned to like this method of cooking because it makes me have fun and be creative. It makes me remix things that maybe would have been tossed or simply left behind to grow old.
One of my favorite remix dinners is the pizzetta. Take Whole Foods very thin pita bread (a must, nothing works quite as well) then, see what's in those plastic containers, drawers and jars. Here are some of my most successful combos: mashed potatoes, thinly sliced red onion, capers...into the oven until crisp...then top with smoked salmon or prosciutto. Another combo is lentils, crumbled blue cheese, fresh thyme and a drizzle of balsamic. You get the point, nothing is out of the question.
So next time dinner is looming don't panic, see what's in your "frigo" and have fun. Just remember that happy cooks make happy food.
